"I was delighted to taste this vertical from Château du Moulin-à-Vent spanning the years the Parinet family has been at the helm of this historic, reference-point estate that traces its history back to the early 18th century. Today the wines see 2-3 weeks on the skins, with natural fermentations and low SO2, a very classic Burgundian approach that eschews carbonic maceration. Over the last few years the trend has been to lower the use of new oak and increase whole clusters, which now hovers around 35-40%, depending on the wine and vintage. Aging ranges from 9-15 months, once again, depending on the year, about 80% in oak and 20% in tank. There are six wines, the Moulin-à-Vent Beaujolais and five lieu-dit bottlings.
