This year, I once again tasted in the Saddes' new and much more commodious cellars in Beaune, which have permitted expansion of their fledgling domaine. Vineyard work is organic and biodynamic, and winemaking features appreciable percentages of whole bunches, followed by élevage in used barrels—though the challenges of sourcing these can certainly be enervating for a producer anxious, as Sadde is, to avoid overt oak influence in her wines. This contains 80% whole bunches (less in 2023) with 20m\/g of free SO2. The perfumed nose shows slightly darker fruit than other cuvées, with raspberry, blackberry leaf and a briar hint. The palate is medium-bodied with fine structure, a fine line of acidity and a little tension towards the finish. Excellent.
